The baking industry has evolved rapidly in my life time. When I was a child, many towns had only tasteless white bread (made of the same stuff as packaging peanuts). Americans developed a taste for heartier wheat breads and new artisan breads. Meanwhile the agriculture industry developed new strains of wheat with absurdly high levels of gluten causing millions of Americans to see gluten free diets.
